Evening Snacks

Paneer Makhanwala, Paneer Lazeez, Paneer Birbali, Paneer Khurchan, Paneer Noorjahani, Paneer Kadai, Paneer Achaari.. and many more.. I am always confused with all these paneer recipes. This saturday I had to make some paneer dish since my father-in-law was coming for lunch. I gathered vegetables, bought paneer and tried to make Paneer-Capsicum, however that turned out to be something like Paneer Kadai....



Ingredients :
For vegetable
500 gms Paneer ( Cottage Cheese)
2 chopped capsicums (I used yellow and red)
1 finely chopped onions
1 finely chopped tomatoes
1 cup red paste (See recipe below)
1 tspn ginger paste
1 tspn garlic paste
2 tspns corriander-cumin powder (Dhana Jeera powder)
1 tspn red chilly powder
1 tspn turmeric powder
2 tbspn garam masala
1 tspn kasoori methi
4 tbspns oil
2 tbspns butter
2 tbspns cashews
1/2 cup chopped corrianer
Salt to taste

For Red paste :
2 chopped Onions
2 chopped Tomatos
3-4 dry red chillies
1 tspn cumin seeds
3 tbspn oil


Preparation :
To make red paste :

Heat oil in a pan
Add cumin seeds and red chillies
Fry red chillies in it for 1-2 minutes
Then add onion and fry till it becomes transparent
Lastly add tomatoes and further cook till it leaves oil
Transfer it into blender
Make fine paste

To make vegetable :
Heat oil and butter in a Pan
Add ginger and garlic paste and saute
Then add chopped onions and fry till it becomes transparent
After that add chopped tomatoes
Cook till the oil starts getting seperated
Then add the gravy paste, chopped capsicum, cashews, and half quantity of corriander.
Mix it and cook it for further 7-8 minutes
Add Dhana-jeera powder, red chilly powder, turmeric powder, garam masala and kasoori methi.
Add salt to taste
Mix well the entire gravy
Lastly, add the chopped paneer pieces
Gently mix it with gravy so that the pieces are not broken
Cook paneer in gravy for 3-4 minutes
Add dollop of butter into the vegetable
Garnish it with chopped corriander
Serve hot

I do not have any specific source from where this recipe has been taken, but my mom's diary has a  recipe of Paneer Kadai, which is similar to this recipe.
